In this blog, we have compiled 5 quick, easy, inexpensive and healthy vegetarian recipes - perfect for when you don't have time to cook.

  • Broccoli, Carrots and Nut Salad

  • Simple but super tasty, fresh and nutritious, this broccoli, carrot and nut salaf is bursting with colour and crunch! Perfect for a quick and easy lunch or dinner.


    How to prepare:

    • Cut the broccoli into florets and cook it in a saucepan with water and salt for 5 minutes.
    • Peel the carrots, grate them and add them to the broccoli. 
    • Prepare, in a glass, a vinaigrette with oil and lemon juice to dress the salad. 
    • Finally, chop a handful of walnuts and add them to the dish.


  • Stuffed Avocados 

  • Avocados are extremely nutritious - in fact, they contain so many key vitamins and minerals that they are one of the only food items that could solely sustain a human (although we do not recommend trying it!) 


    Stuffed avocados are a quick, easy and filling breakfast, lunch or dinner. They are also customisable depending on your preferences (or whatever you have left lingering in the fridge!)


    How to prepare:

    • Cut an avocado in two and empty half.
    • Chop the pulp and mix it with other ingredients that you like, such as lentils, cucumber, eggs, cheese or tomato.

  • Fruit Salad

  • The best thing about a fruit salad is that it requires no cooking, only chopping! Also, for those who have a serious sweet tooth, it makes a healthy, delicious and nutritious dessert alternative.


    A top tip for making your fruit salad: select very ripe fruit and then leave them in the fridge for an hour before making the salad so that your fruit salad is extra flavourful and refreshing!


    How to prepare:

    • Choose your favourite fruit
    • Cut the fruit into small pieces and dress with either yoghurt or orange juice. And voila! You have a quick, tasty and nutrient-rich snack or dessert!


  • Cold Chickpea Salad

  • A mixed vegetable salad is all your body needs to go to bed happy! We recommend the following combination of veggies for a tasty, crunchy and flavourful salad: 


    Once you have mixed the veggies together in a large bowl, drizzle over olive oil, and a few squirts of lemon juice. Then, season with a generous sprinkling of salt, pepper, paprika and cumin! 


  • Courgette Mini Pizzas

  • For this delicious, inexpensive and super simple healthy pizza alternative, you only need three ingredients: courgette, tomato sauce and cheese (Plus, any other toppings you desire!)


    How to prepare:

    • Cut the courgette into slices and bake the slices on high heat until slightly browned
    • Spread a generous amount of tomato sauce on top of each courgette slice. Then, sprinkle on s generous helping of cheese, and any other toppings you desire!
    • Return the mini pizzas to the oven for a few minutes until the cheese is melted. Then remove from the oven and enjoy!
